There is no such thing as a candle thermometer. Wax works in the same temperature band as sugar, so a candy thermometer is the tool, and nobody makes a version with a candle on the box worth paying extra for.

The surface of a pot of wax cools faster than the wax underneath it, especially with a draft over the top. An infrared reading can therefore sit several degrees below the true bulk temperature, and it is the bulk temperature the 170F and 140F figures refer to.
Infrared readings also depend on the emissivity of what you are pointing at. Molten wax is glossy, and glossy surfaces are exactly what infrared thermometers read least reliably.

How much does it matter in practice? A five-degree error at the fragrance addition point means adding oil at 165F or 175F instead of 170F, which is inside the range most people work in anyway.
